JEERA RICE

WITH FRIED KOFTAS

Jeera rice is a simple and delicious rice dish cooked with cumin seeds. 

The plain jeera rice and koftas (meatballs) together is the perfect combination.


INGREDIENTS FOR JEERA RICE


1 kg Basmati rice (washed and soaked in water)

1 ½ liters Water

1 Onion (sliced)

1 tsp Cumin seeds (Jeera)

3 Cardamom

3 Cloves

2 inch Cinnamon stick

1 Chicken stock

3 green Chillies (slit lengthwise)

Some mint leaves

2 tsp Ginger and Garlic (paste)

100 gms of Ghee (Clarified butter) or vegetable oil

Salt to taste

 

METHOD


Heat oil in a vessel.

Add cumin seeds (jeera), cardamoms, cloves and cinnamon stick and heat for 1 minute.

Now add sliced onion.  Fry until it gets golden brown colour.

Add green chilies, mint and ginger-garlic paste.  Fry them for 2 minutes.

Dissolve chicken stock with warm water and add to the mixture.

Now add water and salt.  Bring it to boil.

Add Rice and cook until the water gets evaporated.

Keep it on a low flame till you get enough steam.

Cover it carefully.

 

INGREDIENTS FOR FRIED KOFTAS (MEATBALLS)


1 kg minced meat (qeema)

50 gms Ghee (Clarified butter)

2 eggs

3 tbsp Tomato puree

2 tsp Ginger (paste)

2 tsp Garlic (paste)

1 Onion (finely chopped)

2 Onions (sliced and fried)

1 tsp Cumin seeds

3 tsp Red Chilly powder

2 tsp Black Pepper powder

1 Chicken stock

1 tbsp Wheat flour (Maida)

2 cups Water

Salt to taste

 

For garnishing

6 green Chillies (chopped)

1 tbsp Coriander leaves (chopped)


METHOD


STEP ONE


Put the minced meat in a bowl.

Add black pepper powder, red chilly powder, wheat flour (Maida), ginger and garlic paste, eggs, coriander leaves, green chillies and salt.

Mix it nicely and keep it aside for half an hour.

Take sufficient mince mixture to form meatballs.

 

 STEP TWO

 

Heat ghee (clarified butter) in a fry pan.

Fry cumin seeds.

Add 2 cups of water and chicken stock.  Bring it to boil.

Add tomato puree, red chilli powder and salt.

Add meatballs and cover it for 5 minutes.

Garnish with fried onions and  coriander leaves.
